Deep Roots in Phang Nga: Where the Passion Began
Long before the international flights and the professional kitchens, the Krua Mae Dang story began in a humble family kitchen right here in Phang Nga. Mae Dang (Chef Chuthamat Phornphiriyanon) didn’t learn to cook from a textbook; she learned through the rhythmic sound of a stone mortar and pestle.
Growing up, she watched her mother carefully balance the pungent saltiness of fermented fish with the sharp acidity of lime and the creeping heat of bird’s eye chilies. This early education in the “soul” of Isan and Southern Thai cooking became the foundation for everything she does today. It’s this deep, ancestral knowledge that allows us to serve food that tastes like a home-cooked meal, even in a modern restaurant setting.
A Culinary Journey Across Oceans
Mae Dang (Chef. Chuthamat Phornphiriyanon) spent years getting her cooking just right, and that journey took her from the coast of Phang Nga all the way to the United States. There she introduced all sorts of people to the strong, lively flavours of Thai and Isan cooking. Her recipes got a reputation for being utterly, completely authentic.
Mae Dang has always thought the best food is made with the same methods and attention to detail she learned decades ago from her mother in her own kitchen, and it doesn’t matter if that kitchen is in a busy American city or our peaceful spot in Bang Niang.
Bringing the “Taste of Home” Back to Thailand
After her years living elsewhere, she couldn’t ignore how much she missed home. Mae Dang came back to Thailand determined to open somewhere where tourists and the people who live here could experience proper Thai warmth.
We’d noticed visitors to Khao Lak wanted something in particular: truly authentic, spicy local dishes, and a pleasant place to eat them.
So Krua Mae Dang was designed as a comfortable, modern place, fully air conditioned and welcoming, where the heat comes from the chillies and not the sticky air!

We hand-grind many of our spices to ensure the essential oils stay vibrant and aromatic. Our broth simmers for hours to achieve a natural depth of flavor that MSG simply cannot replicate. When we say we source from local markets, we mean it—we maintain close relationships with local fishermen and farmers in Phang Nga to ensure that the shrimp, crab, and herbs on your plate were in the ground or the sea just hours before.

The chef’s special is the Tamarind Shrimp. You really shouldn’t go without trying Mae Dang’s own favourite.

The shrimp, which comes from around here, is lovely and tender, and is coated in her special sweet and sour tamarind sauce and sprinkled with crunchy shallots. It’s a perfect mix of Thailand’s four main flavours: sweet, sour, salty and spicy.
